Rapid Homus for a Light Lunch

This morning, I had just enough Bourke Street Bakery potato & rosemary sourdough for 2 slices & I still had a few tomatoes left from the crate I was given by a friend (though that’s another story).

I had a whim for homus & tomato & I’d not made homus for a good while, so I quickly whipped up some homus in my trusty mini food processor.

I promise the recipe for my homus will be [Edit: and was] one of the first I post. It is the second recipe in my little recipe book (the first being a FABULOUS chocolate pie recipe written in there by my friend, who gave me the recipe book!)

The homus is simple, fast, & tasty, which is what I’d like to hope most of my recipes are!
